Overview

Green Bay Dressed Beef, LLC, an American Foods Group Company has opportunities for a Quality Assurance Sorter at our Acme plant in Green Bay, WI.

 

Summary

This role will conduct carcass and carcass part sorting activities and identify any condemnable conditions or defects before carcasses and their parts are presented to online inspectors.  The focus will be to separate carcasses, parts and viscera that are unwholesome and unfit for human food from those that are fit for human food.  The ideal candidate will have hands-on knowledge, training and/or experience in basic microbiology, basic chemistry, sanitation, and HACCP. 

  • Through observation and occasional touching of the carcass and viscera make a decision about the wholesomeness and fitness of each carcass and viscera and then properly dispose of unwholesome carcasses, parts and viscera to ensure they are not used as human food.
  • Perform preparation (e.g., cuts) and presentation activities. 
  • Mark carcasses and carcass parts identified with abnormalities and/or pathological lesions. 
  • Follow food safety conditions and company procedures (e.g., heads, tongues, viscera, carcass).
  • Notify the proper person if you identify, while conducting sorting activities, an animal or carcass you suspect has a reportable or foreign animal disease.
  • Maintain required documentation.
  • Attend training at hire and annual refresher training as needed.
  • Must be willing to train and educate others.

Qualifications

Minimum Qualifications (Required):

  • Must be 18 years of age or older.
  • Must be able to work in the United States without sponsorship.
  • Diploma or GED.
  • Demonstrated knowledge of food safety and quality.
  • Must be able to successfully complete training:
    • Safety Quality Foods (SQF)
    • Good Manufacturing Practices (GMPs)
    • Standard Operating Procedures (SOPs)
    • Sanitation Standard Operating Procedures (SSOPs)
    • Hazard Analysis and Critical Control Points (HACCP)
    • Straight knife
    • Steel
    • Hook
    • Food defense

Preferred Qualifications

  • Hands-on knowledge, training and/or experience in Basic Microbiology, Basic Chemistry, Sanitation, and HACCP.
  • Knife experience.
  • Quality assurance experience.

Knowledge, Skills, and Abilities:

  • Must be able to work in a fast paced environment.
  • Strong attention to detail and observational skills.
  • Knowledge of beef anatomy to recognize common parts of the beef carcass, skeleton, and digestive tract.

Work Environment

Regularly exposed to warm, hot, humid or wet conditions with slippery surfaces, and moving equipment/parts.  Position requires the use of stairs and personal protective equipment (PPE).
