Job Description

  • Review daily events and reservations with the Culinary Leadership to ensure timely preparation of food items in line with Fairmont’s high standards of quality and efficiency.
  • Execute food preparation, cooking, plating, and presentation with precision, meeting the expectations of a world-class culinary experience.
  • Maintain a clean and organized kitchen environment, adhering to all food safety and sanitation protocols.
  • Ensure proper rotation and storage of products in all chillers to minimize waste and spoilage.
  • Handle, store, prepare, and serve all food products safely, strictly following Fairmont Waterfront’s guidelines and Food Safety standards.
  • Complete all EHC (Environmental Health Consultancy) standards daily, including filling out temperature logs, labelling and dating items, and maintaining cleanliness in food storage areas.

Qualifications

  • Previous 18 months experience in a high-end kitchen required
  • Previous experience working in a luxury hotel an asset
  • High level of knife skills
  • Diploma/Certification in a Culinary discipline preferred
  • BC Food Safe Certification required
  • Strong interpersonal and problem-solving abilities
  • Highly responsible & reliable
  • Ability to work well under pressure in a fast-paced environment
  • Ability to work cohesively as part of a team
  • Ability to focus attention on guest needs, remaining calm and courteous at all times
